All Saints (Omnia Sanctorum) is a festival dedicated to the memory of ancestors which is celebrated no November 1 and it is related to the feast held the next day, the Dia de los Muertos or Day of the Dead, 2 November. The traditional belief is that no November 1, visit the living and the dead no November 2, the dead visit the living. This festival is one of the oldest in the Christian world. In this day it is a tradicional to visit the cemetery in the town and make a flower offering to all our dead relatives. Some time ago this event was followed by the whole family, adults and children but nowadays only older people go there. The tradicional sweets of Valencia in these days are bunyols de vent, ossets de sant and fogasses. In the old times it was homemade by mothers and daughters but now we all buy them at the bakeries.
BUNYOLS DE VENT
Ingredients: (for about 30 fritters)
125ml milk
75g flour
60g butter
3 eggs
salt
Dry anise
Sugar
Preparation:
We put the milk and butter in a saucepan no the fire with a
pinch of salt. When the milk boils and all the butter has melted, we add it all
at once sifted flour and cook it, stirirng, until it is detached from the walls
of the pot. We turn off the heat and eggs and stir until it smooths. We add the
three eggs. We fry small portions of dough into hot oil. When they are still
warm, we wet them with a Little anise dry and coat them with sugar.
FOGASSA
Ingredients:
-1Kg Flour
- 3 ouns
- A quarter of sugar
- $ wafers
- Wine 100g
- Oil (glass of wine, for younger glass cut)
- Water (glass of wine)
Preparation:
We heat the wáter and dispose it no rent. We add eggs, sugar
and flour, mixing it and kneading it. We leave it to rest and cover it with a
napkin. We knead the dough and divide i tinto equal balls. We flatten them over
the wafers and place some walnuts and almonds. We put them in the hot oven for
halfan hour.
